Hernan Martinez was born and raised in San Miguel de Allende in Mexico. From an early age he cherished the opportunity to interact with family members around the dinner table. When his step-father, a Chicago native, joined the family, Hernan got his first taste of American cuisine. This influence merged with his vibrant Mexican heritage to create some of Hernan’s fondest childhood memories. He treasured his family’s lively holiday celebrations that centered on the cooking and sharing of delicious homemade food.
Hernan spent time travelling throughout his college years, living in Spain, France and Canada, before settling down in New York City. His international experiences served to greatly intensify his passion for food and wine.
Years of casual restaurant experience as a teenager helped him solidify his post-college decision to fully commit to the hospitality industry. Diving into the bustling restaurant world of New York City, he worked at Eleven Madison Park (ranked amongst the top 5 of the World’s 50 Best Restaurants) for over two years before moving on to a management role at Maison Premiere in Brooklyn. At the same time, he pursued and obtained his Certified Sommelier certificate, leading to a role as Service Director of sibling restaurant Sauvage, at which he was an integral part of the opening. With over 10 years of experience in hospitality and always looking to push forward, Hernan is a passionate and holistic General Manager.
